The 2006 21 Grams is almost the polar opposite of the 2005.  The 2006 was much more structured and closed at bottling, but showing more of a ruby red color as opposed to the blackness of the 2005.  This is the truth of 21 Grams.  As it is a blend of many lots from across the state, it is the essence of the vintage. 

The object of 21 Grams is exquisite balance, long length, intensity and complexity - the true components of quality.  Firm acidity and moderate alcohol are the prime directives for our wines, favoring elegance over brute power. The 2006 shows firm, integrated, silky tannins, announcing young Cabernet. Like a great chef using salt, oak usage during maturation is always complementary.  Too little and the wine is flat, but not too much to be easily detectable.

Black fruits - the signature of 21 Grams.  In fact, this is the biggest difference between 21 Grams and the Cabernet Sauvignons of Waters and Gramercy which are marked by exotic red fruits. The 2006 is again defined by earthy, dusty notes with gravel, mushroom, truffle and cedar. Ripe fig, cassis, black cherry, raspberry and black olive complement the earthiness, with a touch of vanilla and baking spice.
